Mussels with garlic and lime butter

Ingredients :

2 lb ( 1 kg ) mussels
1/2 cup ( 4 oz/125 g) butter,softened
2 cloves garlic,crushed
2 tbs chopped fresh parsley
2 tbs chopped fresh chives
1 tsp grated lime zest
freshly cracked black pepper to taste
Methods :
Scrub mussels under cold running water with a nylon pad or stiff brush and pull off hair-like "beards",discarding any mussels that are cracked or do not close when tapped.Place in a large bamboo steamer or steamer basket.In a small bowl,mix butter,garlic,parsley,chives,lime zest and pepper.
Partially fill a large wok or pot with water (steamer should not touch water)and bring to a rapid simmer.Place steamer over water,cover,and steam untill mussels open.4-6 minutes.Remove from steamer,spoon butter mixture into each shell,and serve immediately with a tossed green salad and crusty bread.
Serves 4
Tip :Remove mussels from shells and place one or two on an endive (chicory/witloof) leaf,and serve topped with lime butter.Substitute shelled and deveined shrimp (prawns) for mussels.

Steaming Seafood

I would like to write a little knowledge about steaming seafood,because its very important while cooking.Less or more time can cause the taste and sweet of seafood feel different.
As a general guide,depending on size,cooking times are :
Whole fish : 10 - 15 minutes per lb (500 g)
Fish fillets : 5 - 8 minutes
Fish cutlets : 8 - 12 minutes
Mussels : 3 - 6 minutes
Prawns : 3 - 6 minutes
Scallops : 2 - 3 minutes
Australian Balmain bugs : 8 - 12 minutes
Lobster : 10 - 15 minutes
You can always cook it for a little longer if necessary.For added flavor,marinade before steaming ,then reduce marinade and serve as a sauce.
To test if it's cooked,insert a fork into the thickest part of fish.If the flesh is opaque throughout and flakes easily,it's done.

Japanese Sushi Rice

Hi...do you like eat rice,seems like a stupid questions...he..he...I think most of Asian people have it every day,but what I want to write is sushi rice...
Sushi Rice
Ingredients:
1 1/2 cups (10 oz/300 g) short or medium grain rice
1 1/2 cups (12 fl oz/375 ml) cold water
For sushi vinegar
1/4 cup ( 2 fl oz/60 ml)rice vinegar
2 tbs sugar
1/4 teaspoon salt
Method:
Wash rice in 3 or 4 changes of cold water until water is clear.Let drain for 5 minutes,then place in a bowl that fits in bamboo steamer or steamer basket,and add water.Let soak for 30 minutes.Place in steamer.
Partially fill a wok or pot with water,cover,and steam until cooled and water evapotated,20-25 minutes.Remove heat and let stand for 10 minutes with a cloth under the lid to stop any condensation dripping back onto rice.If softer rice is preferred,let rice stand slightly longer.
Put hot rice in a flat,shallow,non metallic dish and pour sushi vinegar over.With a wooden paddle or spoon,sliced through rice at a 45 degree angle to break up any lumps and distribute vinegar evenly.Fan cool for 5-8 minutes,turning rice 2 to 3 times for even cooling.Cover with a damp kitchen towel to stop rice drying out until served
To make sushi vinegar:
Combine ingredients in a small bowl,stirring until sugar and salt dissolve completely.Mixture can be heated over low heat if required.(Sushi vinegar ingredients can be altered according to taste).Stir into hot cooked rice
Makes about 4 1/2 cups (22 1/2 oz/675 g)

Corn On The Cob

Corn? Today I want to show you cook corn by steaming,I have tried before and its very sweet,good taste and simple cooking.
Ingredients:
4 fresh ears corn,husks removed
Marinade no.1:
1 tbs light soy sauce
1 tbs olive oil
1/2 ts (teaspoon)Asian sesame oil
1 glove garlic,crushed
Marinade no.2:
1 tbs sweet chili sauce
1 ts fish sauce
1/2 ts Asian sesame oil
1 clove garlic,crushed
1 ts grated lemon or szechwan pepper
2 tbs chopped fresh cilantro ( fresh coriander)
Try one of these marinades to give corn on the cob a different flavor.
Combine marinade ingredients in a shallow dish and pour over corn.Refrigerate for several hours or overnight,turning corn occasionally.Wrap each cob in parchment (baking)paper,twisting the ends to seal.Cook in a covered steamer over rapidly simmering water until tender,6-8 minutes.
Serves 4
Try to serve at tea time and feel the taste,and drink a cup of tea will be perfect,I think,but its all up to you.

Baby potatoes with lemon dill butter

Ingredients :
Baby Potatoes
1 1/2 lb (750 g) unpeeled baby potatoes,washed
1 - 2 tablespoons butter
1 teaspoon grated lemon zest
1 - 2 tablespoons chopped fresh dill or parsley freshly ground black
pepper to taste.
Methods:
Put potatoes in a bamboo steamer or steamer basket.Partially fill a wok or pot with water (steamer should not touch water) and bring to a raped simmer.Put steamer over water,cover,and steam until potatoes are tender, 12-18 minutes,depending on size.(Potatoes are done when easily pierced with a skewer).Toss potatoes with butter and zest,and dill or parsley.Sprinkle with pepper.
Serves 4-6

STEAMING

Tradionally,if you mentioned steaming,people would think only of steamed vegetables.But time have changed,the emphasis today is on light,healthy cooking methods that allow the flavor of food to stand out.
Steaming suits this trend perfectly.The natural taste and shape of food is retained,and light flavorings ,seasonings and sauces are used to enhance,not to dominate.
The taste and aroma of herbs,spices and other condiments are gently steamed into the food.
Steaming is a surprisingly easy way to cook without the need for expensive way to cook,without the need for expensive equipment.
So.if you haven't yet tried steaming,try it ,you will be pleasantly surprised.
I have a few recipes based on steaming,I will share it at next time.

Why we drink Green Tea ?



The reasons drink green tea is that the daily dose of disease fighting, inflammation,squelching antioxidants, long linked with heart protection and there still have alots as shown below :
Green tea can cut our cancer risk
They said several polyphenols, the potent antioxidants green tea's famous for ,seem to help keep cancer cells from gaining a foothold in the body, by discouraging their growth and then squelching the creation of new blood vessels that tumors need to thrive. The study has found that people who regularly drink green tea reduce their risk of breast, stomach, esophagus, colon, and/or prostate cancer.

Can soothe and smooth our skin
I just know too,that got a cut, scrape, or bite, and a little leftover green tea,soak a cotton pad in it. The tea is a natural antiseptic that relieves itching and swelling. You can try it on inflamed breakouts and blemishes, sunburns, even puffy eyelids. And in the lab, green tea helps block sun-triggered skin cancer, whether you drink it or apply it directly to the skin which is why you're seeing green tea in more sunscreens and moisturizers. (its a good idea)

Steady blood pressure

People who drink just half a cup a day are almost 50 percent less likely to wind up with hypertension than non-drinkers. Credit goes to the polyphenols (especially one known as ECGC). They can help keep blood vessels from contracting and raising blood pressure.

To protect our memory,or old people

Drink green tea also keep the brain from turning fuzzy. Peoples who drink at least two cups a day are half as likely to develop cognitive problems as those who drink less. Why? because the tea's big dose of antioxidants fights the free-radical damage to brain nerves seen in Alzheimer's and Parkinson's.

The more healthier your arteries are means that the younger and healthier you are. So lets fight plaque build up in our blood vessels, which ups the risk of heart disease and stroke, adds years to our biological age and saps our energy too. How much green tea does this vital job take? About 10 ounces a day, which also deters our body from absorbing artery-clogging fat and cholesterol.

Turns out that green tea speeds up our body's calorie burning process. In the every little bit counts department, this is really a good news!

ARSENIC TRIOXIDE

Today an email has sent to me,its very impotance to share with all.In Taiwan a lady died with blood out of all her five sense,you know why ?
Because she eat prawn at dinner and after eat she drink a glass of water containing vitamin C.Why ? ?
Because prawn/shrimp containing Arsenic Pentoxide (As2O5),after had prawn she drink vitamin C that the two item in her body mix and As3O5 changes and become Arsenic Trioxide (As2O3),thats a very poison.
After I read this email I am very scared,because I like eat prawn too but I like to drink a cup of tea after that,so I think it save me,because I really don't know this process.
So its important to us don't eat prawn and drink vitamin C at the same time.

Breakfast can help prevent strokes, heart attack and sudden death. Advice on not to skip breakfast! Healthy living For those who always skip breakfast, you should stop that habit now! You've heard many times that "Breakfast is the most important meal of the day."
Now, recent research confirms that one of the worst practices you can develop may be avoiding breakfast. Why? Because the frequency of heart attack, sudden death, and stroke peaks between 6:00a.m. and noon, with the highest incidence being between 8: 00a.m. and 10:00a.m.What mechanism within the body could account for this significant jump in sudden death in the early morning hours?
We may have an Answer. Platelet, tiny elements in the blood that keep us from bleeding to Death if we get a cut, can clump together inside our arteries due to cholesterol or laque buildup in the artery lining.
It is in the morning hours that platelets become the most activated and tend to form these internal blood clots at the greatest frequency. However, eating even a very light breakfast prevents the morning platelet activation that is associated with heart attacks and strokes.
Studies performed at Memorial University in St.Johns, Newfoundland found that eating a light, very low-fat breakfast was critical in modifying the morning platelet activation.
Subjects in the study consumed either low-fat or fat-free yogurt, orange juice, fruit, and a source of protein coming from yogurt or fat-free milk. So if you skip breakfast, it's important that you change this practice immediately in light of this research. Develop a simple plan to eat cereal, such as oatmeal or Bran Flakes, along with six ounces of grape juice or orange juice, and perhaps a piece of fruit. This simple plan will keep your platelets from sticking together, keep blood clots from forming, and perhaps head off a potential Heart Attack or stroke. So never ever skip breakfast

Singapore at Christmas

Hi..talking about shopping,Indonesian people like it very much.I found it at every time at my Christmas holiday in Singapore.I think you all must agree that Singapore is the best place to shopping even only window shopping like me he..he..I only buy things if there is a big sale in orchard road and you will find it easy at end of December.Most of all item have sale and gift every where.
Do you know what is the situation at the Christmas day in Singapore ? You will find Indonesian language at every where especially in orchard road or other main road.Why ? Because every where you can find Indonesian people are shopping ha..ha..ha..
I my self like walking along orchard road ,I like the situation,very crowd,beautiful,good view.And go to esplenade for a walk , sit down to see the out side view.
And eat Singapore favorite food,like hainam chicken rice,fish ball soup or spicy crab stick.It taste good.

Crispy Roast Chicken

Weekend again today,what supposed I have to do today ? Maybe go for a walk.In Jakarta peoples like to go out for saturday,with their kids or for the young one go for shopping,see the weekend sale,eat something,to see movie or go to the mountain for refreshing and fishing.
Others like to cook special recipe because their family like to have special moments with whole family after work hard fo a week.
In this morning I like to cook
Crispy Roast Chicken
Ingredients:
600 g chicken portions.cut into pieces
Marinade :
A: 2 tbs oyster mushroom sauce
1 tbs honey
1 tbs cooking oil
1/4 tbs dark mushroom sauce
Method :

  1. Clean and wash chicken,prick meat with a fork and pat dry with kitchen paper.
  2. Marinate chicken with A overninght or at least 1/2 hour in the fridge.
  3. Place marinated cchicken on wine rack resting over a microwave safe plate.
  4. Baste chiken with oil before roasting.
  5. Cook on roast chicken at microwe button,or combination at manual system,set about 20 minutes.
  6. Baste chicken with honey at the least 5-10 minutes of cooking process.
  7. Cut roasted chicken into serving pieces and arrange on attractive platter.Serve hot .

Wholesome Vegetable Soup

Jakarta have a rainy day in these days,I hope there are no floating again...If my city have a heavy rain in one or two days without stop,there is a signal for people have to keep on eye that floating will be come.Funny but its true,after floating there are so may people got sick.
I my self prepared this situation by taking more time in health,to maintain our body stronger,but not fat also he..he...And I always like cooking,but make sure don't eat too much meat,rice.Eat vegetable more is better,or sometimes I cooked vegetarian recipe.
Today I write wholesome vegetable soup but not pure vegetarian because it have chicken.
Wholesome Vegetable Soup
Ingredients :
500 ml water
150 g chicken pieses,without skin
150 g carrot,cut into wedges
100 g potato,cut into wedges
75 g bombay onions,cut into wedges
50 g button mushroom
50 g tomatoes
1 pcs chicken stock cube

Method:
  1. Place all ingredients in a deep pan (for soup)
  2. Cook covered on fire medium power for 15 minutes and follow on small fire for 20 minutes.
  3. Serve soup hot with rice or buttered buns or toast

Makes : 4-6 serving
